My partner's favorite cotton sweater had the same damage on the finished edge of the mock turtleneck. A friend of ours who knots and crochets did a slip stitch around it in black (sweater is olive) and it looks great.

Not the ideal solution, but every bit a adequately quick prepare I folded the end inside and sewed it over, stitching alternating on the diagonal ane one side and along the length on the other side and so it stayed stretchy. This was after I realised the contrasting fold over elastic I bought was a bit difficult for me to sew together on properly. Might be a amend selection for you though :-)

Maybe some thick double fold bias tape? I make my own with a flat iron and carte stock. Would be cool to do with some denim scraps and a blanket stitched edge to keep your knit stitches intact... or peradventure cut the ribbing off some worn socks and Frankenstein some new cuffs
